Ingredients
- Topping:
- 1 1/2 cups flour
- 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 7 large eggs, separated
- 1/2 teaspoon cream of tartar
- 2 ripe Bonita bananas
- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 1/2 stick butter
- 1/2 cup brown sugar
- 1/4 cup milk
- 1 cup confectioners' sugar
- 2 ripe Bonita bananas, peeled and sliced

Preparation
Step 1
Preheat oven to 325 F.
Sift flour, baking powder and baking soda into a bowl.
Beat egg whites in another bowl. Add cream of tartar and continue beating until fluffy.
Mash 2 bananas in a large bowl. Add egg yolks, sugar and oil, and beat until creamy.
Stir in sifted flour. Fold in egg whites.
Pour into a greased angel food cake pan and bake for 55 minutes. Let cool in pan.
To prepare the topping, place butter and brown sugar in a saucepan and melt over medium heat. Stir in milk and confectioners' sugar.
Decorate cake with sliced bananas and caramel sauce.
Makes 8 servings.
