Ingredients
- 2 cups flour
- 3 Tabls. herbes de Provence
- 1 1/2 teas baking powder
- 3/4 teas fine sea salt
- 1/2 cup unsalted butter, at room temp
- 1/4 cup (2oz) goat cheese, at room temp
- 3 Tabls. sugar
- 2 eggs, beaten, at room temp

Preparation
Step 1
put an oven rack in the center of over...preheat to 350..line a baking sheet w/parchment paper and place aside.
In med bowl, whisk together the flour, herbes d P, baking powder and salt...set aside
In mixer..use paddle attachment..beat butter and goat cheese until smooth..beat in the sugar and the eggs. Add the flour in small batches and beat til just combined. Transfer dough to the prepared baking sheet with damp hands..form the dough in a 13" X 3 1/2" wide ...bake until golden, about 30 minutes..COOL ON THE BAKING SHEET FOR 30 MINUTES
Transfer loaf to cutting board...with serrated knife, cut the log on the diagonal into 1/2" slices..arrange biscotti, cut side down on the original baking sheet...bake until pale golden about 15 mins..(I did 15 mins on one side and carefully turned them over and did about 8 -10 mins more) transfer to a wire rack to cool completely about 30 mins. they are so yummy...a little fragile to handle, but when they cool they crisp up ...I love them because they're not as hard as regular biscotti..don't have to dunk them to enjoy them!!!!!
