Ingredients

  • 1/2 cup (1 stick) butter or margarine, softened
  • 1/2 cup C&H® Light Sugar & Stevia Blend
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • C&H® Powdered Sugar , for dusting

Preparation

Step 1

In large bowl, beat butter and Light Sugar & Stevia Blend with electric mixer on medium speed until creamy. Add eggs, 1 at a time, and vanilla; beat until just incorporated. In separate bowl, combine flour, baking powder and salt. Slowly pour flour mixture into butter mixture; mix until blended. Divide dough in half and shape into two discs, wrapping each in plastic wrap. Refrigerate for at least 1 hour, until firm.

Preheat oven to 375 F. Lightly grease or line 2 cookie sheets with parchment paper; set aside. Remove one disc at a time from refrigerator. On lightly floured surface, roll dough to 1/4-inch thick; cut into desired shapes with cookie cutters. Transfer onto cookie sheet; bake 8-10 minutes or until edges of cookies are slightly browned. Cool 15 minutes on cookie sheet, then remove cookies onto wire rack to cool completely. Dust with confectioners' or powdered sugar.
