Ingredients
- 1 8 oz. can crushed pineapple (undrained)
- Cold Water
- 2 Cups boiling water
- 1 package (8 serving size) Lemon Jello
- 1 1/2 cups (1/2 of a 8 oz. tub) Cool Whip or
- Small Heavy Whipping Cream (Optional - add small amount sugar and 1 tsp. vanilla), Whipped
- 1 1/2 Cup Mini Marshmallows
- 1 Cup Cooked white Rice

Preparation
Step 1
Drain pineapple (reserving juice). Add enough cold water to measure 1 Cup. Stir boiling water into gelatin in a large bowl stir at least 2 minutes until completely dissolved.
Stir in measured liquid. Refrigerate 1 1/2 hours or until slightly thickened (consistence with unbeatened egg whites).
Stir in whipped toping with wire whisk until smooth. Refrigerate 10 minutes or until will mound.
Stir in pineapple, marshmallows and rice.
Spoon into serving dish or dishes sprayed with cooking spray.
Refrigerate at least 3 hours.
