Ingredients

  • 2 tbsp. oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 4 - 5 chopped tomatoes
  • salt & pepper
  • 1 tsp. basil
  • 1/2 tsp. oregano
  • 1 1/2 cups grated cheddar cheese
  • 6 cups (3) zucchini

Preparation

Step 1

Peel and slice zucchini into 1/4" slices. Lay on paper towels and sprinkle with salt. Let stand 30 minutes; blot dry. Saute onion, peppers and mushrooms in oil for 5 minutes. Add chopped tomatoes and seasonings. Simmer 20 minutes.

In a 2 quart casserole, layer zucchini, vegetables and cheese, 2 to 3 layers, ending with cheese. Top with grated parmesan.

Bake 350 degrees for 45 minutes.
