Ingredients

  • 1/4 c. margarine, melted
  • 1 c. sugar
  • 2 eggs
  • 3/4 c. mashed very ripe bananas (2 or 3)
  • 1 c. chopped cranberries, fresh or frozen
  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon

Preparation

Step 1

Put butter, sugar and 1 eggs in mixing bowl. Beat until smooth. Beat in second egg, Stir in bananas and cranberries. Using another bowl, combine baking powder, flour, baking soda, salt and cinnamon. Stir together well. Add all at once to banana mixture. Stir only to moisten. Scrape into greased 9 x 5 x 3" loaf pan. Bake at 350 degrees for 1 hour, until it tests done. Let stand 10 minutes. Remove from pan to cake rack to cool.
