Ingredients
- 16 oz peaches (4 large), chopped
- 1/2 c rum (1 tsp flavoring and 1/2 c water)
- 1 c all purpose flour
- 3/4 c oatmeal
- 1 c sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp allspice, ground
- 18 tsp cloves, ground
- 1 large egg, slightly beaten
- 3 tbs butter, melted
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 3/4 c almonds, chopped

Step 1
Cook peaches and rum about 15 minutes, until tender.
Combine flour and next 7 ingredients. Stir in peach puree, egg, melted butter, and extracts. Pour into a greased and floured baking pan. Bake at 350* for 1 hour or until a wooden pick comes out clean.
