Ingredients

  • 16 oz peaches (4 large), chopped
  • 1/2 c rum (1 tsp flavoring and 1/2 c water)
  • 1 c all purpose flour
  • 3/4 c oatmeal
  • 1 c sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice, ground
  • 18 tsp cloves, ground
  • 1 large egg, slightly beaten
  • 3 tbs butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 3/4 c almonds, chopped

Preparation

Step 1

Cook peaches and rum about 15 minutes, until tender.
Combine flour and next 7 ingredients. Stir in peach puree, egg, melted butter, and extracts. Pour into a greased and floured baking pan. Bake at 350* for 1 hour or until a wooden pick comes out clean.
