Ingredients
- 6 slices french bread (1 mini loaf), cut into 1" cubes
- 1/2 TBS olive oil
- 1/2 lb ground breakfast sausage (i use pork sausage)
- 8 eggs
- 3 cups milk
- 1/2 bag frozen green beans cut and cooked
- salt & freshly ground pepper to taste
- 2-1/2 cups grated cheddar cheese

Preparation
Step 1
1) Butter large baking dish
2) Place bead cubes in a large bowl
3) In a saute pan over medium heat, warm olive oil, add sausage & cook; turning occasionally till browned on both sides (3-5min) total.
4) Using a slotted spoon, transfer sausage to a plate. When cool, cut into thin slices and transfer to the bowl with bread.
5) In another large bowl, whisk together eggs & milk. Pour egg mixture over bread & sausage. Add green beans, salt, pepper & 2 cups of cheese and stir till well blended. Transfer to prepared baking dish. Cover with plastic wrap & refrigerate 4 hours or overnight.
6) Preheat oven to 350, sprinkle with 1/2 cup cheese. Bake until golden brown & cooked thru~approx 1hr. Let cool for 10min prior to serving.
