Ingredients

  • 1 cup plus 2 T soymilk, heated to steaming and kept warm
  • 1/4 cup finely ground espresso
  • 2 T instant coffee
  • 2 cups all purpose flour
  • 4 T soy flour
  • 2 tsp baking power
  • 2 tsp ground cinnamon
  • 1/4 cup fine sea salt
  • 1 1/2 cups granulated sugar
  • 1 cup canola oil
  • 1 T pure vanilla extract
  • 3/4 cups semi sweet chocolate chips

Preparation

Step 1

Preheat oven to 350. Line a loaf pan with prchment paper and grease well.

In a small bowl, whisk together the soymilk, espresso, and instant coffee until smooth. Set aside.

In a medium bowl, combine the flour, soy flour, baking power, cinnamon and salt in a mixing bowl.

In a large bowl, combine the sugar, canola oil, and vanilla whisking until smooth. Add the flour mixture to the bowl, alternating with the milk mixture, stirring just until mixe. Stir in the chips.

Scoop the batter into the pan and bake for 60-70 minutes until the top of the cake is puffed with a crack down the center, and a tester comes out clean.

Let cook for 10 minutes and then remove from pan and cool to room temperature.
