Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup old fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp Kosher Salt
  • 2 large eggs (add another white if too dry)
  • 3 Tbsp vegetable oil
  • 1 Tbs orange zest or 1 tsp orange exrtact**
  • 2 tsp lemon zest or 1 tsp lemon extract**
  • 1 1/2 tsp vanilla extract
  • 1 tsp almond extract
  • 1 cup dried cherries
  • 1 cup pistachio nuts
  • use the extract for more flavor

Preparation

Step 1

Preheat ovent to 350 degrees.

Combine first 6 ingredients in a mixer w/paddle attachment. Blend on low speed for 30 seconds.

In a seperate bowl, whisk eggs with the next 5 ingredients. Add to flour mixture. Stir in cherries and nuts.

Transfer to a floured surface. Shape into log or 2 rectangular logs.

Bake until brown and set 30 minutes. Transfer to a rack and cool 15 minutes. Reduce oven to 250 degrees.

Cut with a serrated knife into slices and return cut side down to pan. Bake rotating half way through 40 minutes.

Store at room temperature.
