Artichoke Rice Salad

Ingredients
- 1 box chicken flavored rice-a-roni - make according to directions (I did use half water and half chicken stock as the liquid)
- 4 green onions thinly sliced
- 1 red or yellow or orange pepper chopped (if you like peppers go ahead and use two!)
- 12 pimento stuffed olives-sliced
- 2 6 oz. jars of marinated artichoke hearts
- 1 t. curry powder
- 1/2 c. mayo
- (optional- 3 chicken breasts cooked and chopped)

Step 1
Drain artichoke hearts and halve. Save the marinade in a bowl and whisk in the mayo and curry. Mix with the chopped veggies then add the rice (and chicken). Great for picnics and large groups!
My suggestions-I doubled the recipe for the shower. The rice will absorb the liquids, so if you make it a day ahead- check to see that is isn't too dry! I keep an extra jar of marinated artichokes on hand in case and mix with some mayo and add. Use those artichokes elsewhere, as it might be too many
