Orange Chocolate Chunk Cake

This is really good!!! Tastes like the Hostess Orange Cupcakes with chocolate! Esp. the batter!! YUM!!! She made hers as mini cakes whereas I just made one big Bundt cake.

Ingredients

  • Syrup:
  • 1 stick unsalted butter at room temperature
  • 1 box yellow cake mix (not butter recipe)
  • 3 large eggs
  • 1/8 cup grated orange zest from 2 large oranges
  • 1/4 cup freshly squeezed orange juice
  • 3 oz. buttermilk at room temperature
  • 1 tsp. vanilla extract
  • 1 cup semisweet chocolate chunks
  • 1 TB flour
  • 1/4 cup sugar
  • 1/4 cup freshly squeezed orange juice
  • Ganache:
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream
  • 1/2 tsp. Instant coffee granules

Preparation

Step 1

Preheat oven to 350. Grease & flour a Bundt pan. In a large bowl, combine butter, cake mix, eggs, orange zest, orange juice, buttermilk, & vanilla using a mixer. Toss the chocolate chunks with flour & add to the batter. Pour into Bundt pan. Bake according to cake mix directions. In a small saucepan over medium-low heat, cook the sugar & orange juice until sugar dissolves. Remove cake from pan when it's cool enough. Spoon syrup over the cake. Allow cake to cool completely. Melt chocolate, heavy cream, & coffee in the top of a double boiler (or use a glass bowl over a pot) over simmering water until smooth & warm, stirring occasionally. Drizzle over the top of the cake.
