Swedish Meatballs with Parsley Pesto

- 1 Ib. ground beef
- 1/3 cup bread crumbs
- 3/4 cup whipping cream
- 1 Tbs onion powder
- 1 egg
- 1 1/2 tsp salt
- freshly ground pepper to taste

In a small bow mix breadcrumbs, whipping cream and onion powder and let sit for 5 minutes. In a large bowl mix beef, egg, salt and pepper and add the breadcrumb mixture. Using your hands, mix all of the ingredients together to until well blended.
Use a tablespoon to scoop meat out of the bowl and roll a meatball between your palms. It is helpful to have a small bowl of water nearby to dip fingers in as you keep rolling the meatballs. This will make it easier to keep the beef from sticking to your hands.
Place each meatball on a baking sheet as you go. Brown in batches over medium-high heat until all brown then finish off the meatballs in the over at 350 degrees F. for ca. 15 minutes.
Drizzle the parsley pesto on a serving platter and place meatballs on top of it and serve!
