  • 3 ⁄4 cup sugar substitute
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup almond flour or meal
  • 1 ⁄2 teaspoon baking soda
  • 1 ⁄2 teaspoon pumpkin pie spice
  • 1 ⁄3 cup chopped pecans
  • FILLING
  • 3 tablespoons butter, softened
  • 6 ounces cream cheese, softened
  • 1 ⁄2 cup sugar substitute
  • 1 teaspoon vanilla extract

Preparation

Step 1

1 Preheat oven to 350°F and line a sheet pan with parchment paper.

2 Place cream cheese, butter, sugar substitute, egg, and vanilla extract in an electric mixer and beat on high until fluffy.

3 Add the almond flour, baking soda, pumpkin pie spice, and pecans, and beat on medium, just until all is combined into a thin dough.

4 Using a spoon or a 1-ounce ice cream scoop, drop 16 evenly spaced dollops of the dough onto the prepared sheet pan and press down lightly to flatten.

5 Bake 8 to 10 minutes, until cookies are springy in the center. Let cool at least 15 minutes.

6 Meanwhile, beat all Filling ingredients in an electric mixer on high until well combined.

7 Spread a thick layer of the Filling in between 2 finished cookies to make a Whoopie Pie. Repeat with all remaining cookies. Chill at least 4 hours before serving.

HELPFUL HINTS
You can make your own pumpkin pie spice by mixing 3 tablespoons ground cinnamon, 3 teaspoons ground ginger, 2 teaspoons ground nutmeg, and 1 teaspoon allspice. Only use 1⁄2 teaspoon of the finished spice in this recipe though!
