Quinoa Pilaf with Peas and Sage

Ingredients
- 1 cup quinoa
- 2 cups fat-free chicken or vegetable broth
- 1 tbsp olive oil
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced green pepper
- 1/2 cup diced red pepper
- 1 cup frozen peas, thawed
- 1/2 tsp dried sage
- 2 tbsp pine nuts, toasted

Step 1
In a medium saucepan, combine the quinoa and broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 12 minutes, until the broth is absorbed.
A few minutes before the quinoa is done, heat the olive oil over medium-high heat in a large nonstick skillet. Add the onion, celery, and bell peppers and saute for 4 minutes. Stir in the peas and cook for 1 more minute. Stir in the cooked quinoa and mix well. Stir in the sage and pine nuts, season to taste with salt and pepper, and serve immediately.
