Ingredients

  • 4 cups lentils, rinsed and picked through
  • 32 oz beef broth (or veggie broth to make vegetarian)
  • 2 cups water
  • 1 medium yellow onion, diced
  • 2 cups carrots, sliced
  • 1/2 cup celery, sliced
  • 28 oz can diced tomatoes, undrained
  • 1 large russet potato, diced
  • 4-6 cloves garlic, minced
  • 2-3 bay leaves (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Step 1

Place all ingredients in a 5-6 quart crockpot.

Cook on LOW for 7-8 hours or until vegetables are tender.
