TWICE BAKED POTATOES WITH BACON AND GRUYERE

Ingredients
- 4 medium potatoes unpeeled
- 2 teaspoons olive oil
- 1-1/2 cups (6 oz.) swiss cheese divided
- 2/3 cup cooked bacon
- 1/2 cup whipping cream hot
- 2 tablespoons butter softened
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon freshly grated nutmeg

Step 1
Heat oven to 400 degrees. Rub potatoes with oil, prick skins in several places with fork. place on baking sheet, baket 55-60 minutes or until tender. Cut potatoes in half lengthwise. Scoop hot flesh into large bowl (leave jsut enough flesh in skins to create shells firm enough to hold filling, mash until smooth. Add 1 cup of the cheese and bacon, stir to combine. Add cream and butter, stir until well blended. Stir in salt, pepper and nutmeg.
Spoon mixture into potato shells, top with remaining 1/2 cup cheese. Place on baking sheet. Bake 20-30 minutes or until stuffing is hot and cheese is lightly golden brown.
