Ingredients

  • 1 1/2 lb. ground turkey
  • 4 Tbs. canola oil, divided
  • 1 cup each of diced onion, carrot and celery
  • 1 Tbs. each minced garlic and thyme
  • 3 Tbs. all-purpose flour
  • 2 Tbs. tomato paste
  • 1 can diced tomatoes, drained (14.5 oz.)
  • 1 cup low-sodium chicken broth
  • 1/2 cup dry red wine
  • 1 Tbs. worcestershire sauce
  • 2 tsp. Dijon mustard
  • 1 cup frozen green peas
  • Salt and Pepper to taste
  • 8 cups frozen hash brown potatoes
  • 4 Tbs. unsalted butter
  • 1 cup shredded white cheddar

Step 1

1. Preheat oven to 400. Coat a 2-quart oval or rectangular baking dish with nonstick spray.
2. Brown turkey in 2 Tbs. oil in saute pan over med-high heat, 8-10 mins. Transfer turkey to paper-towel lined plate.
3. Heat remaining 2 Tbs. oil in same pan over med. Add onion, celery, carrot; sweat, about 5 mins. Add garlic and thyme, cook until fragrant, 1 min.
4. Stir in flour and tomato paste; cook 1 min.
5. Whisk in diced tomatoes, broth, wine, worcestershire sauce, and Dijon; bring to boil. Reduce heat to med-low and stir in turkey and peas; season with salt and pepper. Transfer filling to dish and place on baking sheet.
6. Arrange potatoes on top of filling, then drizzle with butter.
7. Bake pie for 30 mins. Sprinkle top wtih cheddar and bake until potatoes are cooked through, about 20 mins. Let pie cool 10-15 mins. before serving.
