Ingredients

  • 2 TB butter
  • 2 TB flour
  • 1 tsp ground mustard
  • 1 1/2 cups whole milk (cold)
  • 1 cup grated cheddar cheese (sharp)
  • salt & pepper

Preparation

Step 1

In medium size pan over medium heat, melt butter.
Add flour and mustard.

Allow bubble and stir occassionally for several minutes. As soon as it starts to brown slightly, add half of the milk.

Stir until it thickens. Gradually stir in the rest of the milk. Simmer for at least 8 minutes, stirring occassionally.

Reduce/remove from heat and stir in cheese.

Season.


NOTE: Use in Macaroni and Cheese or cheese sauce over vegetables, etc.
