This variation of basic white sauce is versatile and especially good with fish and vegetables. The basic white sauce contains no onion salt or cayenne pepper.

Ingredients

  • 2 tbsp hard margarine (or butter)
  • 2 tbsp all-purpose flour
  • 1/2 tsp onion salt (or salt)
  • 1/8 tsp pepper
  • cayenne pepper, just a pinch
  • 1 cup milk

Step 1

Melt margarine in small saucepan on medium-low. Stir in flour until smooth. Add onion salt, pepper and cayenne pepper. Stir. Increase heat to medium-high.

Stir in milk. Heat and stir for about 3 minutes, until boiling and thickened.

VARIATION:
Thin white sauce: reduce margarine and flour to 1 tbsp each.

Thick sauce: Increase margarine and flour to 3 tsp each.

Cheese sauce: Add 1 cup grated medium cheddar cheese. Stir until melted.
