Ingredients
- 4 tablespoons butter
- 2 garlic cloves, chopped
- 6 tablespoons flour
- 2 cups chicken stock
- 2 ½ cups water
- ½ pound cheddar cheese, grated (about 2 cups)

Step 1
1.In a large saucepan melt butter over medium heat. Add garlic and cook until soft, about 1 minute.
2.Reduce heat to medium low, stir in flour and cook, stirring until the mixture bubbles.
3.Gradually add ½ cup chicken stock, ¼ cup at a time. Stir constantly to incorporate each addition completely. Slowly add remaining 1 ½ cups stock and water, still stirring.
4.Return soup to a simmer and then remove from heat.
5.Stir in half the cheese until it melts into the liquid then stir in remaining cheese.
6.Serve at once.
