Ingredients

  • 6 cups of water
  • 9 chicken bouillon cubes
  • 2 slices of onion chopped
  • 2 garlic cloves chopped
  • 9 or so pieces of peppercorn
  • Boil and simmer the above
  • 1-1/2 lbs boneless skinless chicken breasts
  • 1 cup corn (frozen or canned)
  • 1 cup peas (frozen or canned)
  • 1 large baking potato skinned and chopped
  • 1 cup egg noodles uncooked

Preparation

Step 1

1) boil
2) simmer for 2 hours (covered)
3) strain

4) 20 min before broth is done simmering , heat oven to 400 and partially cook chicken. Place chicken on foil with tsp of olive oil and dash of lawry's seasoning salt. Bake unocovered for 15 = 25 min (depending on thickness of chicken).

5) Add the following to the broth:
1 to 1-1/2 lbs of chicken chopped
1 c. corn (frozen or canned)
1 c. peas (frozen or canned)
1+ cup egg noodles (uncooked)
1 large potato skinned and chopped (uncooked)

6) Cover, bring to a boil and simmer for 1 hour.
