Ingredients
- 1 tablespoon olive oil
- 1/2 cup finely chopped onions
- 1 cup fresh grapefruit juice and segments
- 4 6-ounce portions Camanchaca skinless, boneless salmon
- Fresh grapefruit slices for garnish

Preparation
Step 1
Heat olive oil in a large nonstick saut6 pan over medium heat. Add onions and cook until tender.
Add grapefruitjuice and segments and salmon to the pan. Cover and simmer over low heat for 6-8 minutes, or until fish is cooked to taste.
Serve salmon with sauce, garnished with grapefruit slices.
Makes 4 servings.
