Mom Tabak's Pork Chops and Sauerkraut 1 Picture

Ingredients

  • 3 bacon slices
  • 6-8 pork chops
  • 1 medium onion, sliced
  • 2 27-ounce cans sauerkraut
  • 2 small potatoes, peeled and cut in 1 -inch cubes
  • 2 small Sage Fruit Granny Smith apples, peeled and cut in bite-size pieces
  • 3 tablespoons brown sugar

Preparation

Step 1

Preheat oven to 300-325 F

Fry bacon in a large skillet over medium heat until crisp; remove from the pan.

Brown pork chops in bacon fat. Remove chops to a casserole and keep warm in the oven.

Add onion to the pan and brown for about 5 minutes. Add just enough water to loosen particles from the pan.

Drain sauerkraut and rinse. Add sauerkraut to the pan,along with potatoes, apples and crumbled bacon. Sprinkle with brown sugar and mix.

Add sauerkraut mixture to the casserole, cover and bake until ready to serve-about 1 hour, as long as the pork chops don't dry out. Adjust time and temperature according to the chops'thickness.

Serve with your favorite applesauce.

Makes 4-6 servings.
