  • Cake:
  • 1 package yellow cake mix
  • 1 egg
  • 1 stick unsalted butter, melted
  • Filling:
  • 1 package cream cheese, softened
  • 1.5 cups canned pumpkin
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 stick unsalted butter, melted
  • 3.5 cups icing sugar
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg

Step 1

1. Preheat oven to 350 degrees F.
2. Combine cake mix, egg and butter and mix well using an electric mixer. Pat mixture into a lightly greased 13x9" baking pan.
3. In a large bowl, beat cream cheese and pumpkin until smooth. Add eggs, vanilla and butter, and beat together. Add the sugar, cinnamon and nutmeg and mix well.
4. Spread pumpkin mixture over cake batter and bake for 40-50 minutes. Don't overbake. The center should be a little gooey.
5. Serve with freshly whipped cream.
