Ingredients
- 2 1/2 cups butter-garlic flavored croutons
- 2 cups shredded white cheddar cheese
- 1 onion, chopped
- 8 oz. mushrooms, sliced
- 6 strips crisply fried bacon, crumbled
- 4 extra large eggs
- 2 cups milk
- salt/pepper to taste
- Other vegetables normally used in omelets may be added

Preparation
Step 1
1) Cook bacon until crisp, set aside to drain. Crumble when cool
2) Saute chopped onions in butter or oil until softened. Add mushrooms and saute until soft and liquid is nearly evaporated. Add pepper to taste.
3) Spread the croutons in a baking dish. Top with onion & mushroom mixture, cheese, and bacon.
4) In separate bowl, whisk eggs together with milk. Pour over everything in baking dish. Stir to combine. Top with extra cheese, if desired.
5) Refrigerate overnight so that croutons absorb the liquid. In the morning, remove from fridge & add milk if casserole seems to be too dry. Bake at 350 degrees for 45-50 minutes.
Note: You may freeze assembled unbaked casserole for later use. When choosing to cook later, remove it from the freezer and transfer to the fridge approximately 24 hours before you want to bake.
