Ingredients
- 1 to 2 limes
- 1/2 cup sesame seeds
- 4 boneless, skinless chicken breast halves
- Salt and ground black pepper
- 1 teaspoon vegetable oil
- 1 teaspoon toasted sesame oil
- 4 tablespoons butter
- 1 ( 3/4-inch) piece fresh ginger root, peeled and grated
- 1 tablespoon soy sauce
- Leaves from 6 to 8 stems cilantro, chopped

Zest limes to make 1 teaspoon; set aside. Juice limes to make 2 tablespoons; set aside. Spread the sesame seeds on a plate. Place chicken between pieces of plastic wrap and pound lightly to an even thickness of 1/2 to 3/4 inch. Season on both sides with salt and pepper, then gently press the chicken into the sesame seeds so the chicken is coated evenly.
Heat the vegetable oil and sesame oil over medium heat in a large skillet. Add the chicken and cook for about 5 minutes, adjusting the heat as needed so the sesame seeds don’t burn. Turn chicken over and cook until it is cooked through and lightly browned. Transfer to a platter and cover loosely to keep warm.
Use paper towels to wipe out the skillet, then return it to medium heat. Add the butter and swirl to coat as it melts.
Add the ginger; cook, swirling or stirring, for a few minutes. Stir in the lime juice and the soy sauce.
Pour the pan sauce over the chicken, then sprinkle with the cilantro and lime zest. Serve right away.
