Ingredients

  • 1 pound ground turkey
  • 1 pound Ground beef
  • 1 cup Seasoned bread crumbs
  • 1 1/2 cups Zucchini; shredded
  • 1 Egg; slightly beatten
  • Salt and pepper, to taste
  • 1/4 cup ketchup

Preparation

Step 1

Preheat oven to 400 degrees.

In a large bowl, combine all ingredients, except ketchup and blend well. Some people say hands are the only way to mix meatloaf, peronally I use my KitchenAid.

Prepare muffin pan by spraying with cooking spray, then place about 1/3 cup of meatloaf mixture into each cup, pressing lightly but not squishing, then spread a little ketchup over the tops.

Bake for 20 minutes, or until centers are no longer pink. Use a knife around the edges to get them out of the muffin cups. Serving size is 2 mini meatloaves.
