Ingredients

  • 2 large eggs
  • 4 egg whites
  • 1 tsp salt
  • 1/2 cup canola or almond oil
  • 1/4 cup honey
  • 1 cup old fashioned rolled oats
  • 1 cup cooked barley
  • 2 tsp cinnamon
  • 1 cup flour blend
  • Optional: 1/2 cup each chopped walnuts and/or raisens

Preparation

Step 1

Preheat oven to 350. Line a 13x9 in baking pan completely with foil and butter.

In a large mixing bowl, whisk together the eggs, egg whites, salt, oil, and honey. Stir in the oats, barley, cinnamon, Flour blend, and walnuts and/or raisens. Mix well, then pour into the prepared baking pan. Press down with palm of hand, evenly distributing the mix into the corners. Bake for 30-35 min. Check occassionally to prevent burning.

REmove from the oven and using the foil to help you, lift the giant bar out of the pan. Place on a flat surface and while still warm, cut into small bars, approx 1in x 3in.

Store in an airtight container for up to a week, or freeze in plastic bags.
