Ingredients
- 1 cup cornmeal (Note-I found this to much cormeal and reduced by 1/2 cup and added 1/2 cup whole wheat flour the second time i made it)
- 1 cup whole wheat flour
- 1 tsp oregano
- 1 tsp basil
- 1/2 - 1 tsp garlic powder
- 1/4 tsp sea salt
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 eggs
- 1 1/2 cups buttermilk
- 2-4 Tbsp tomato paste or pizza sauce, divided
- 1/2 cup shredded cheddar
- Optional add-ins
- chopped red pepper
- sundried tomatoes chopped
- 2 Tbsp sugar
- nutritional yeast

Preparation
Step 1
Preheat oven to 400 F.
Spray a muffin tin with cooking spray. (do not use muffin cups-they will stick)
In a large bowl, mix together cornmeal, flour, spices, baking powder and baking soda.
in a second bowl, combine eggs, buttermilk, 1 Tbsp tomato paste and 1/3 cup cheese. Add to dry and mix until just combined.
Divide mixture evenly in a 12 cup muffin tin.
Bake for 10 minutes, remove from oven and top each muffin with a smear of tomato paste and a little cheese
bake for another 10 minutes.
Store in an air tight container for one day or wrap individually and freeze
