Ingredients

  • 1 can green beans, drained (or use fresh cooked)
  • 1 can yellow beans, drained (or use fresh cooked)
  • 1 can garbanzo beans, drained
  • 1 (14.5 ounce) can kidney beans, drained
  • 1 (14.5 ounce) can black beans, drained
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1/2 tsp salt (or less)
  • 1/2 tsp ground black pepper
  • 1/4 cup white sugar (optional)

Step 1

Combine the green beans, wax beans, garbanzo beans, kidney beans, black beans, green pepper, onion and celery in a large bowl; toss to mix.

Whisk together the vinegar, salt, pepper and sugar (if using) in a separate bowl until well mixed and the salt and sugar are dissolved; add the oil and whisk together. Pour over the bean mixture. Refrigerate 8 hours or overnight before serving.
