Ingredients

  • 1/4 cup chopped chives
  • 1/4 cup sour cream
  • 1 bag taco scoops
  • 19-ounce can black beans
  • 1/3 cup finely chopped green pepper
  • 1/3 cup finely chopped red pepper
  • 2/3 cup frozen or fresh yellow corn
  • 1/4 cup finely chopped onion
  • 1 pound chorizo, chopped and saut
  • 1/4 cup chopped scallions
  • 2 tablespoons chopped cilantro
  • 2 tablespoons olive oil
  • juice of one lime, plus zest
  • salt and pepper to taste

Step 1

Reserve ⅛ cup chives, sour cream and taco scoops. Combine remaining ingredients. Add salt and pepper. Fill scoops with mixture. Add sour cream and garnish with chives
