Ingredients
- 1/4 cup chopped chives
- 1/4 cup sour cream
- 1 bag taco scoops
- 19-ounce can black beans
- 1/3 cup finely chopped green pepper
- 1/3 cup finely chopped red pepper
- 2/3 cup frozen or fresh yellow corn
- 1/4 cup finely chopped onion
- 1 pound chorizo, chopped and saut
- 1/4 cup chopped scallions
- 2 tablespoons chopped cilantro
- 2 tablespoons olive oil
- juice of one lime, plus zest
- salt and pepper to taste

Preparation
Step 1
Reserve ⅛ cup chives, sour cream and taco scoops. Combine remaining ingredients. Add salt and pepper. Fill scoops with mixture. Add sour cream and garnish with chives
