Cashew Chicken Stir Fry

Ingredients
- 2 cloves garlic, thinly sliced
- 1 lb chicken, skinless breast halves cut into 1 1/2"chunks
- 1 large red pepper, cut in 1 1/2" chunks
- 2 scallions, cut in 1"long pieces
- 1/4 cup water
- 3 tbs stir fry sauce
- 1/2 cup unsalted roasted cashews

Preparation
Step 1
Coat a large non stick skillet with cooking spray, heat over medium to low heat.
Add garlic, cook stirring constantly until lightly browned. About 2 minutes.
Increase heat to a medium-high heat. Add chicken, cook, stirring until chicken is browned and no longer pink in centre.
Stir in peppers, scallions, water and stir fry sauce. Cook stirring occasionally, until peppers and scallions are softened & sauce has thickened slightly. About 5 minutes.
Transfer to platter. Sprinkle with cashew.
Seve on a bed of rice.
