Ingredients

  • Chili-Lime wet rub:
  • 1/4 cup chilli powder
  • 1/4 cup olive oil
  • juice of lime, approximately 2 tbsp
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 10 whole chicken wings
  • Cilantro Dipping Salsa:
  • 2 ribs celery, coarsely chopped
  • 1/2 large green pepper, coarsely chopped
  • 1 onion, coarsely chopped
  • 1 cup cilantro leaves, coarsely chopped
  • 1 clove garlic, crushed
  • 2 tbsp olive oil
  • juice of 1 lime, approximately 2 tbsp
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried mint leaves

Step 1

Wet Rub:

Combine chili powder, oil, lime juice, garlic powder, salt and cayenne pepper in medium bowl. Mix well.

With sharp knife, cut tips off chicken wings and save for another use. Slash inside of wing joint to help them cook more evenly but don't cut all the way through. Put wings in large bowl, pour wet rub over them, mix well to coat. Cover and refrigerate at least 1 hour, up to 12.

Dipping Salsa:

Put celery, pepper, onion, cilantro, garlic powder, oil, lime juice, salt, pepper and mint in blender until mixture begins to liquify, then puree 1 minute until smooth. Transfer to bowl, cover and refrigerate.

Prepare grill for cooking over direct medium heat. Grill wings about 25 minutes, turning often until browed and juices run clear. Serve with salsa.
