School Cafeteria Yeast Rolls

Ingredients
- 2 pkg. Active Dry Yeast
- 1 1/2 t salt
- 10 oz water
- 3 T shortening
- 1/4 c dry milk
- 1 egg
- 1/3 c sugar
- 4 C all purpose flour

Preparation
Step 1
Soften yeast in 4 oz warm water. Hot water will kill the yeast. Combine sugar, salt, shortening and dry milk in mixing bowl then add rest of warm water (6oz). Add 1 1/4 c flour and mix well. Add softened yeast and beaten egg. Add remaining flour ( 2 3/4 c flour) to make a soft dough. Knead until smooth and satiny.(Knead on speed #2 for 8-10 minutes). Place dough in a greased bowl and grease top of dough. Cover and let rise in warm place until double in bulk. Knead and shape into rolls. Place in greased pan. Cover and let rise until double. Bake at 350* for 30-35 minutes. Brush with melted butter after baking. :) :)
I use my Kitchen Aid mixer with the dough hook to make the dough. Here is the filling I use for the cinnamon rolls: 1 stick of butter, 3/4 c brown sugar, 1/4 c flour and 1 T cinnamon. Use a pastry blender to cut the butter into the other ingredients. I made a batch of cinnamon rolls today using this recipe. :) :) It makes 15 cinnamon rolls and I bake them in a 9 by 13 inch greased pan.
