Roasted Red Pepper and Brie Quesadilla

Ingredients
- 1 T EVOO
- 3/4 c thinly sliced onions
- 1/2 c roasted red peppers, julienned
- 2 8" flour tortillas
- 1 c brie cheese, rind removed, cut into small pieces
- salt & pepper to taste

Preparation
Step 1
1. Heat EVOO in a med saute pan.
2. Add onions & cook over med-lo heat until translucent.
3. Mix peppers w/onions, season & set aside.
4. Place 1 flour tortilla on a work surface.
5. Scatter the brie, onion & pepper mixture.
6. Top w/remaining tortilla.
7. Heat griddle or large saute pan.
8. Add enough EVOO to coat the bottom.
9. Cook the quesadilla on both sides until crisp & cheese is melted.
10. Cut the quesadilla into 12 wedges & serve.
