  • 1 prime rib roast with bone and cap of fat
  • salt and pepper to taste

Preparation

Step 1

1. Take the beef out of the fridge 1-2 hours before cooking it to bring it to room temperature.
2. Season the cap with salt and pepper.
3. Place the beef into the roasting pan with the bones on the bottom.
4. Place a meat thermometer into the center of the roast.
5. Roast in a preheated 450F oven for 50-60 minutes letting the outside get nice and brown.
6. Pour water into the roasting pan so that the bones are just partially covered.
7. Turn the heat down to 400 and roast until the meat reaches 135F.
8. Remove the roast, cover it in foil and let it rest for 30 minutes before carving it.
