Ingredients
- 16 oz elbow macaroni
- 1 lb. lean ground beef
- 1 C. diced yellow onion
- 1 15oz can kidney beans, drained and rinsed
- 1 6oz can tomato paste
- 2 10oz cans diced tomatoes with green chiles
- 1 1/2 tsp chili powder
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp garlic powder
- 2 C. shredded cheddar jack cheese

Preparation
Step 1
Boil macaroni 2 minutes less than package directions. Drain and rinse under cold water. Place in rectangular baking dish.
Preheat oven to 375°. Brown beef and onions in a large skillet.
Add all remaining ingredients except the cheese and mix.
Pour mixture over macaroni and mix. Cover with aluminum foil and bake 20 minutes.
Remove from oven and top with cheese, bake for an additional 15 minutes or until cheese is bubbly. Cool 5 minutes and serve.
