I have been holding onto this recipe for about 5 months, and I’m really not sure why it’s taken me this long to share with you. Maybe I was waiting for warmer weather to make it seem more appropriate, since the flavors are warm-weather flavors. Or maybe I was waiting for a holiday that condones lots of drinking. Cinco de Mayo is just a couple of days away, and yes, I know this doesn’t include limes or tequila. Yes, I know it’s not a Mexican flavor. But you know what, it’s alcohol, and that’s what really matters, right?
New Year’s Day 2013. Leftover Pinnacle Whipped Vodka from the night before. What shall we “whip” up? I’m definitely not the drink mixer in the household, so I just told the Mrs to make me something I’ll like. And boy does she know me well! She brought me something pink, which automatically gave her 10 points. It included Pinnacle Whipped Vodka, which added an additional 50. And then I took a sip… Holy Yum! I couldn’t believe it! It tasted like something so familiar. What was it?? And then it hit me. It tasted exactly like a pink starburst! Everyone loves the pink starburst, right? Forget orange and yellow. Red is second best. But pink is number one, and I had those flavors in my glass, and it included alcohol! Total win for me, and it ended up with at least 500 points in the end.
Oh, and while we’re counting up the awesome points, let’s talk other kinds of numbers. I know, I’m not much of a calorie counter, but the substitutions we made in this drink definitely lower the calories. No, I wouldn’t go as far as saying it’s HEALTHY or SKINNY, but it’s definitely an improvement. We used half and half rather than cream. We used DIET lemon-lime soda. And we used Crystal Light fruit punch instead of the real thing. This definitely makes a difference, since it’s so easy to drink your calories real quick. If you’re looking for other ways to
With summer right around the corner, and Cinco de Mayo, you have all the reason in the world to make yourself a Pink Starburst Cocktail, and you’re just going to love it!
Mix Pinnacle whipped vodka, half & half, and fruit punch (or Crystal Light version) in a 12 ounce glass. Fill almost all the way with an Orange Juice of your juice and top with a splash of diet lemon lime soda (Sprite, 7up, or Sierra Mist).
It’s so simple to make and EEEEAAASY (probably too easy) to drink!
