  • 1 1/2

    CUPS OF BLACK COFFEE (DEMI TASSE)

  • PASTRY DOUGH:

  • 2 1/2

    LBS FLOUR

  • 1 DOZ.

    EGG YOKES (SAVE WHITES FOR FILLING)

  • 1-TEASPOON VANILLA OR GRATED ORANGE PEEL

  • 1-CUP SUGAR

    LB OR 3 STICKS FO BUTTER OR 1/2 LB OF BUTTER AND 1/2 CUP OF CRISCO.

Directions

STEPS #1: CREAM BUTTER & SUGAR UNTIL SMOOTH. ADD EGG YOKES & VANILLA & THEN ADD FLOUR. MOLD TOGETHER WITH LITTLE COLD WATER. BLEND ALL INGREDIENTS WITH LITTLE WATER UNTIL ALL TOGETHER. PUT ASIDE & COVER WITH DAMP CLOTH. HANDLE DOUGH AS LITTLE AS POSSIBLE. STEP #2: MELT CHOCOLATE IN DOUBLE BOILER, ADD SUGAR, ALMONDS, VANILLA, CINNAMON & CLOVES. DRIZZLE IN BLACK COFFEE UNTIL EVERYTHING IS MELTED TOGETHER. COOL ADD EGG WHITES (BEATEN STIFF) BLEND EGG WHITES WITH A SPATULA IN FOLDING IN PROCESS. DO NOT BEAT. THIS WAY CHOCOLATE WILL BE LIGHT AND FLUFFY. PUT DOUGH IN TINS AND DO NOT FILL TO TOP. BRUSH EGG WHITES AROUND EDGE AND PUT TOP ON. BAKE 350 TILL BROWN.
