Ingredients
- 1 cup buttermilk
- salt and pepper
- 4 chicken breasts
- 5 slices bread
- 2 tbsp olive oil

Step 1
In a bowl, mix buttermilk, 2 tsp salt, and 1 tsp pepper. Add chicken, stir to coat. Marinate at least 30 minutes, or up to 8 hours.
Preheat oven to 450. In a food processor, pulse bread until fine crumbs form, 30 seconds. Transfer to a rimmed baking sheet, bake until golden, 7 minutes. Transfer to a bowl and toss with 2 tbsp oil.
Set a wire rack in a baking sheet. REmove chicken from marinade, shaking off as much as possible. Coat with breadcrumbs. Place on rack and season with salt and pepper. Bake until cooked through, 45-50 minutes, rotating sheet halfway. Cover with foil if over browned.
