Chicken Walnut Strips

Ingredients
- 1 pound boneless skinless chicken breasts (4)
- 2 eggs
- vegetable oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 cup fine bread crumbs
- 1 cup finely chopped walnuts

Step 1
Cut the chicken into strips. Beat eggs with 1 tbsp. oil, seal and pepper. Mix the crumbs and nuts together in a separate bowl.
Dip the strips, one at a time, in the egg mixture and then coat with the crumbs. Arrange the strips on a rimmed cookie sheet and pour 1/4 cup of oil around, not over, them.
Bake for 15 minutes at 425 degrees.
