Ingredients

  • 1 1/2 cups all purpose flour
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp dry mustard
  • 1 1/2 cup grated cheddar cheese
  • 1 tsp sugar
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1/3 cup milk (can use whole, low fat, skim
  • 1/3 cup water
  • paprika for sprinkling tops
  • 1/4-1/3 cup diced ham or turkey
  • 1/4-1/3 cup chopped green onion

Step 1

Preheat oven to 400 degrees

1. Grease a 12 cup muffin tin. In a medium bowl, combine the all purpose flour, baking powder, salt, dry mustard, cheddar cheese and sugar. In a small bowl, mix together the vegetable oil, egg, milk and water. Add liquid ingredients to the bowl of dry ingredients. **Add ham and/or onion. Quickly mix the ingredients altogether, making sure not to over mix.
2. Fill each muffin cup 3/4 full with the batter. Sprinkle paprika on tops. Bake at 400 degrees for 25 minutes or until done.
3. Let the muffins cool in the muffin tin for about 10 minutes. Lift muffins out with a spoon and serve with butter.
