Ingredients
- 1 to 1 1/2 # round steak (or flank steak)
- seasoning salt
- 1/2 # bacon
- 1 tsp garlic powder
- 1/2 pepper
- 2 tbs parsley, fresh
- 1 (13/4 oz) pkg hollandaise sauce mix
- 1/4 tsp tarragon, crushed

Step 1
Make thin criss-cross cuts in both sides of steak. Sprinkle with seasoning salt, pepper and garlic. Meanwhile cook bacon until almost done but not crispy. Drain. Place bacon strips on steak, sprinkle with parsley. Roll jelly roll fashion and secure with tooth picks. Cut into rounds about 1 inch thick. Grill over medium heat turning once. In a sauce pan prepare hollandaise sauce according to pkg directions, add tarragon to sauce. Pour sauce over steak as it is served.
