Step 1
Set rack in oven to top third and preheat the broiler. Whisk 8 eggs, 3 tbsp heavy cream, 1/2 tsp slat and pepper and set aside. Then melt 2 tbsp butter in 10 inch oven proof pan and add 1 c thinly sliced onions, 1 c thinly sliced green, red or orange bell peppers and cook until soft (7-8 minutes) Then add 1 c thinly sliced mushrooms and 1 c fresh corn kernels and cook 2 minutes, then add 1 c diced smoked ham and cook one minute or until warm, then add 1 tbsp butter and well melted, add egg mixture. Sprinkle 2 tbsp of a mix of fresh herbs to include chives, basil, thyme, parsley, oregano and top with 1 c grated swiss cheese. Reduce heat to medium and cook eggs undisturbed for 3 minutes or until top begins to bubble. Immedialtey place pan in oven and broil about 3 minutes. WE TRIED THIS ON 10/11/11 AND IT WAS VERY GOOD, OBVIOUSLY LEFT OUT ONIONS, MUSHROOMS AND PEPPERS. WE ALL LIKED IT EXCEPT KYLE
