Ingredients
- 1/2 pound unsalted butter
- 2 tblsp vanilla extract
- 1 1/2 apples, peeled and sliced 1/8 inch thick
- 1 teaspoon lemon juice
- 1 tblsp water
- 1/2 tblsp white sugar
- 1 pound plus 1/2 tblsp light brown sugar
- pinch ginger
- 1/4 teas cinnamon
- 2 cups all purpose flour
- 2 teas baking powder
- small pinch salt
- 2 eggs
- 1 cup chopped pecans

Preparation
Step 1
1. Preheat oven to 325.
2. In a large saucepan over medium low heat, melt butter, 1 pound brown sugar, and vanilla extract, but do not allow mixture to boil.
3. Place lemon juice and water in a mixing bowl. Cut apple slices in half. Place into bowl and mix with water and lemon juice to keep the apples from oxidizing. Toss with the white sugar, 1 tbslp brown sugar, ground ginger, and cinnamon. Set aside.
4. In a small bowl, combine the flour, baking powder,a nd salt. Using a separate bowl. Alternately stir in the flour mixture and the eggs, using a whisk to incorporate. Stir int he pecans.
5. Drain the excess liquid from the apples and fold into the flour mixture.
6. Pour mixture into well-greased casserole and bake for 30 minutes. Let cool completely. Cut into rounds using a 3 inch cookie cutter, or slice into squares and serve with your favorite ice cream or caramel sauce.
