  • 2 lg baking apples, peeled and thinly sliced
  • 2 Tbsp unsalted butter
  • 1/4 c sugar
  • 1 Tbsp cinnamon
  • Dough:
  • 2 1/2 c self-rising flour
  • 2 Tbsp sugar
  • 5 Tbsp unsalted butter, melted, divided
  • 1 c cultured whole milk buttermilk
  • Cinnamon-Sugar Filling:
  • 1/3 c sugar + 2 Tbsp cinnamon, mixed
  • Vanilla Glaze:
  • 2 c confectioners' sugar
  • 1/4 c milk
  • 1/4 tsp vanilla extract

Step 1

Preheat oven to 350 deg; grease a pie dish or 9" round cake pan. Set aside.

For the apple filling, cook apple slices, butter, sugar and cinnamon in a large nonstick skillet over medium-low heat for 10-12 min, stirring occasionally, until fork-tender. Set aside.

To make the dough, in a large bowl whisk together self-rising flour and sugar. In a separate bowl, mix 2 Tbsp melted butter, and buttermilk together. With a rubber spatula, stir the milk mixture into the flour mixture until dough forms. Transfer dough to a clean, well-floured work surface. Knead until smooth, sprinkling on more flour as needed. Do not over knead or the cake will be tough. Use a floured rolling pin to roll the dough into a 12x16" rectangle, about 1/4" thick. Brush on 2 Tbsp melted butter, followed by cinnamon-sugar filling.

With the long side facing you, cut 1 1/2" strips of dough. Loosely roll up one strip and place it in the center of the prepared pan (like a standard cinnamon roll). Line the apples around the edges of the dough, then coil another dough strip around the apples. Continue the pattern of dough, then apple slices, until pan is fille.

Pour the leftover liquid from cooking the apples over the formed cake. Pour remaining Tbsp of melted butter over the cake. Bake 40-45 min, or until evenly browned and a toothpick comes out clean. To make glaze, in a medium mixing bowl, whisk together confectioners' sugar, milk and vanilla. Drizzle with glaze, slice and serve immediately, refrigerating any leftovers.
