Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, room temperature
  • 1 egg yolk
  • 1/4 cup milk
  • 1 can unsweetened crushed pineapple
  • 2 tablespoons cornstarch
  • 2 teaspoons rum
  • 1 teaspoon vanilla
  • 1 egg white
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon sugar
  • 1 cup shredded coconut

Preparation

Step 1

Preheat oven to 350 degrees.

Bottom Layer:

Combine flour, baking powder and salt. Cut in margaring until mixture is crumbly. Beat egg yolk and milk together with fork. Stir into crumbly mixture. Press onto bottom of lightly greased 8 inch square cake pan.

Middle Layer:

In a saucepan combine crushed pineapple (with juice) and cornstarch. Cook over medium heat until mixture boils and thickens. Remove from heat and stir in rum and vanilla. Pour over first layer.

Top Layer:

Beat egg white and cream of tartar until frothy. Add sugar and beat until soft peaks form. Fold in coconut. Spread evenly over pineapple layer. Press down lightly with a fork.

Bake for 30 minutes or until top is golden brown.
