  • 2 cups ham, cubed
  • 5 potatoes, peeled and sliced about 1/4" thick
  • 6 Tbls. butter
  • 1 medium onion, chopped
  • 1/2 cup flour
  • 4 cups milk
  • 1/2 tsp. marjoram
  • 1-1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1 pinch ground nutmeg

Step 1

Preheat oven to 350F. Cube ham and set aside. Peel and slice the potatoes and put them in a bowl with enough water to cover them. Heat the butter in a medium pan over medium heat. Add onions and cook until soft, but not brown. Add flour and stir to make a roux. Add the milk and stir constantly while it comes to a gentle boil. Turn the heat down and let the sauce cook for 2 mins, stirring occasionally. Stir in the spices. In a greased 2 qt baking dish, layer half of the potatoes, followed by half of the ham. Pour half of sauce over over layers. Layer remaining potatoes and ham, then cover with rest of sauce. Cover and bake at 350F for 1 hour or until potatoes are tender.

NOTE: To make au gratin potatoes, omit ham and add 1 cup grated cheddar cheese.
