- 1/2 cup zucchini, dried
- 1 1/4 cups white sugar
- 1 1/2 cus flour
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup nuts (optional)

Step 1
Dehydrate zucchini
Combine sugar and vanilla. Dehydrate to remove moisture.
Combine flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger.
Layer the flour mixture, zucchini, nuts and sugar in a 1 quart mason jar.
On a label list the following instructions:
Ingredients needed:
1 1/3 cup of water or milk
2 Eggs
1/3 cup of melted butter or oil.
Empty the contents of the jar into a large mixing bowl. Add water or milk, eggs and of melted butter or oil. Mix all by hand and set aside for 15 minutes to allow the zucchini to hydrate. When you return, mix for 30 seconds to recombine.
Grease and flour one bread pan.
Pour batter in prepared pan. Preheat oven to 325 degrees
Allow batter to rest until the oven reaches the proper temperature
Bake for 1 hour or until a toothpick comes out clean. Remove from oven and cool on a wire rack
